感謝北藝大所上和所學會以「越過山邱」這麼令我感動的主題，為我舉辦這麼特別的活動。在這麼一個寒假的上班日，還有疫情壓力，感謝所有犧牲假期以及排除各種不便的長官、師友、同仁、校友還有同學們，親自前來。

我拙於言辭，卻一直受到榮寵，得以多處教書，三十多年來，先後在東海、南藝和北藝專任，還曾在雲科、北科、逢甲兼任，並因為三校合作，到陽明和政大長期開課，此外，還曾經在台大、成大、輔大、中原、元智、淡江等校單次講課，前前後後，親授的學生，不下三千。衷心感謝所有提供給我機會的人，你們都是我生命中的貴人，讓我教學相長、心境常保年輕，不知老之將至。

臘八過後就是年

今天是農曆十二月(臘月) 初八，俗稱臘八。臘月裡第一個重要節日，意味著春節序幕已經拉開，正如同民間童謠所唱：「小孩小孩你別饞，過了臘八就是年」。即便天氣寒冷，也擋不住人們期盼過年的熱情。

臘八由古代的「臘祭」演變而來。農人辛苦一年，在臘日祭祀祖先和神靈，稱「臘祭」。《祀記·郊特牲》：「歲十二月，合聚萬物而索饗之也。」 臘祭時將各種食材共煮一鍋，這就是臘八粥製作的源起。

發展至今，民間習俗在這天會用各種豆類、乾果，和米等八方食物，一起熬成香噴噴的臘八粥，相信吃了臘八粥，就能更健壯。也代表著：年味漸濃，萬事「粥」全。臘八粥已成為老百姓的節令食物。

一碗臘八粥，因地區、南北、家庭差異，食材、滋味各不同。「八」可以是實指，湊足熬粥的八種食材。也可以是虛指，熬臘八粥以「品多」為勝，在農業社會這是生活富足的象徵。

無論如何，自家熬的這一鍋臘八粥，都是自家這一年的功成圓滿！

值此臘八之際，祝福大家：粥到福到，幸福建康！

其實，最初日本的介護食品只存在於醫院、養老院，多為液態狀，用餐時的色香味條件則非常貧乏，與其說是餐飲，倒不如說是營養劑。

1970年代，隨著食品製造科技改良，大型食品製造業日清集團成立「日清醫療食品公司」，開發針對醫院、護理之家的套餐。

明治集團也接著推出「醫療食品系列」，開發針對需照護者的營養食品。

儘管有資本雄厚的食品製造業投入照護餐飲產業，但當時的餐點仍然是稠稠的半流質，味道、外觀都很單一。進餐，好像只是為了補充營養。

但隨著需要照護的人數增加，眾人也開始注意到「好好吃飯」與維持身心健康的關聯。

1980年代開始，介護食品的議題躍上檯面，無論是營養成分、切塊大小、水分比例、餐飲外型色彩等，都成為討論的主題。

1984年社會福祉法人小田原福祉會潤生園的園長時田純先生發表終末期餐飲的研究，並指出：

進餐不僅是為了補充營養，美味豐富的餐點還能刺激高齡者的食慾，有助於提升生命品質，因此，介護食品不該只限於單一形式。

為了讓吞嚥機能退化、難以進餐喝水的長輩，也能從口中攝取食物，潤生園盡可能讓餐點保持原本的形狀與色香味，以刺激長輩食慾。

他們也搭配協助長輩進餐的照護手法與進餐技巧，藉由料理手法與照護技術的提升，讓被照護者直到臨終前，都能從口中進餐。

這發表在1991年獲得日本營養改善學會的學會獎，「介護食」這三個字也開始受到社會關注。

“Penguin Island," originally published in 1908, begins when a nearsighted monk baptizes the auks that inhabit a remote Atlantic island. After much debate among his saints, the chief resident of Heaven grants the birds souls and makes them more or less human. What ensues is a scurrilous satire of French history, from medieval times up to the Dreyfus affair, and into the future. This English edition, illustrated by Frank C. Papé, was published by John Lane The Bodley Head in 1925.

《企鵝島》最初出版於1908 年，故事開頭是一位近視僧侶為居住在大西洋偏遠島嶼上的海雀施洗。經過他的聖徒們的一番爭論，天堂的首席居民賦予了這些鳥兒靈魂，讓它們或多或少成為了人類。接下來是對法國歷史的粗俗諷刺，從中世紀到德雷福斯事件，再到未來。這本英文版由Frank C. Papé 繪製插圖，由John Lane The Bodley Head 於1925 年出版。
