在當今的歐洲，黃色在日常生活環境裡登場的機會並不多，在符號象徵領域裡的作用也不大。但在歷史上並非一直如此。在古代各民族的眼中，黃色代表光明、熱量和繁榮，它幾乎可以說是一種神聖的色彩。在古希臘和古羅馬的宗教儀式上，黃色佔有重要的位置；而凱爾特人和日爾曼人則認為黃色代表黃金，擁有不朽不滅的特性。黃色地位的衰落始於中世紀，從那時起它具有了兩面性：一方面象徵謊言、吝嗇、背叛，有時還與疾病和瘋狂相聯繫；另一方面又能象徵權力、歡樂和富裕。

從16世紀開始，黃色在世俗文化中的地位繼續衰落。無論是新教改革派、天主教會還是晚些時候的“資本主義價值觀”都對黃色評價很低。雖然在科學領域它位列三原色之一，但黃色的符號象徵意義始終具有正反兩面性。時至今日依然如此，偏綠的黃色在我們眼中總是顯得很不舒服，甚至有些危險，因為它暗示著疾病和毒素；而偏橙的黃色卻顯得歡快、健康、滋補，正如柳丁這種水果一樣。
